From the Galley of Haricots Verts Expeditions[1] Expedition #7

 

Conch Fritters

Ingredients

1 lb. conch meat

½ large onion

2 stalks celery

½ red pepper

½ green pepper

Salt to taste

1 egg

1/3 self-rising flour

1 tsp. baking powder

¼ cup buttermilk

¼ tsp. hot sauce

 

 

 

  1. Put conch through food grinder or food processor
  2. Process onion, celery, red and green peppers.
  3. Combine onion-celery-pepper mixture with conch, adding salt and egg.  Mix well.
  4. Mix together dry ingredients.
  5. Add conch mixture to dry ingredients.  The resulting batter should be thick.
  6. Add buttermilk and hot sauce to the batter.
  7. Carefully drop by heaping tablespoon into deep oil.
  8. Fry until light brown, remove and drain.
  9. Serve with mayonnaise and lime juice.

 

Ok, truth is I never tried this in the Caribbean.  However, I are more than my share of conch fritters.  This recipe combines the ingredients I remember.  These are delicious!
