Saltfish Fritters

 

Ingredients

¼ lb. salted codfish

¼ cup flour

1 medium sized onion

2 medium sized tomatoes

1 small garlic clove

½ teaspoon paprika

2 stalks scallion

¼ teaspoon pepper

 

  1. Soak fish in freshwater overnight to remove excess salt.
  2. Chop and shred fish, or run through food processor (do not purée the fish, you will want some texture).
  3. Chop and combine the onions, tomatoes, garlic and scallions.
  4. Heat a small amount of oil in a skillet and then sweat the tomato-onion-garlic mixture until onions are clear.
  5. In a bowl combine the codfish, flour and enough cold water to make a thin batter.
  6. Stir in the seasoning mixture into the codfish batter.
  7. Spoon the batter into a skillet with hot oil.
  8. Fry until golden brown on both sides, remove and drain.
  9. Keep warm and serve with mayonnaise, lime and/or tarter sauce.

 

Okay, I haven’t tried this one, but I can tell you the saltfish fritters at Fat Hog Bob’s on Tortola were great!  I could see adding some chopped shrimp.  No telling what you could add to fritters.  That’s one of the things that makes them so much fun.

Now, why island people have to resort to salted cod is beyond me.  By the way, you usually can find salted cod in major supermarkets.
